  • 1 tsp black pepper
  • ½ tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp garlic powder
  • ¼ tsp red pepper flakes
  • pinch of cayenne pepper (optional)

Taco Bowl

  • 1 large tomato, chopped
  • ¼ medium red onion, finely chopped
  • 1 Serrano pepper, ½ finely chopped ½ coarsely chopped
  • ¼ cup finely chopped cilantro
  • 3 Tbsp fresh lime juice
  • Kosher salt
  • 1 small yellow onion, coarsely chopped
  • 6 garlic cloves, coarsely chopped
  • 2 Tbsp extra-virgin olive oil
  • 1 lb Big Lost ground beef
  • 2 Tbsp homemade taco seasoning
  • Cooked rice, sliced avocado, tortilla chips, shredded lettuce, and lime wedges for serving

Instructions

  1. Start with making the salsa – toss tomato, red onion, finely chopped Serrano pepper, cilantro, and lime juice in a small bowl to combine; season with salt. Set aside.
  2. Pulse coarsely chopped Serrano pepper, yellow onion, and garlic in a food processor until finely chopped.
  3. Heat olive oil in a skillet over medium-high. Brown your ground beef. Add onion mixture and taco seasoning; cook, stirring often, until it begins to stick to pan. Pour in ½ cup water, scraping up any browned bits stuck to bottom of pan. Cook, stirring often, until sauce is slightly thickened.
  4. Divide spiced beef and rice among bowls. Serve with avocado, tortilla chips, lettuce, lime wedges, and homemade salsa.
